Message	700's won't have "minimal lag". If you're looking for a good power band, on non-aggressive heads and cams, the 700's are going to be much laggier than the 530's. You are right that the 530's will be nearing optimal potential around 500-550 RWHP. But what do you mean "maxing out"? If you mean that want a very reliable 500-550rwhp, then the 530bb's are totally fine - they'll last 100k miles without problem. You are running them near their optimal potential, but in no way running them too hard for reliability. For my money, i wanted a *reliable*, fast, but very importantly- a responsive car. And the comment about people who worry about lag never had a high hp car is one of the most ridiculous things i've ever heard.
